Italian Green Salad
Makes for a healthy yet hearty meal. You can chicken or fish for a protein boost!
Ingredients:
- 4 cups baby leaf spinach
- 4 cups romaine lettuce cut
- 1/2 red onion sliced
- 1 cucumber sliced
- 3 roma tomatoes sliced
- 1/2 cup mushrooms sliced
- 1/2 cup feta cheese
- Salt and pepper to taste
- 1 tablespoon sweet basil
- 1/4 cup Olive Oil de Fino
- 1/8 cup balsamic vinegar
Instructions:
Mix all ingredients in a large bowl, toss and serve.
